In sixth grade, my friends and I ate our lunches under a pine tree at the edge of the playground. As we sat down and opened our lunch boxes, I always wanted to know what everyone else brought. Isn’t that really what lunchtime is for? To compare your food with your friends and attempt to negotiate a better deal? No? Just me?
Most days, our meals were unsurprising – turkey and cheese sandwich, peanut butter and jelly, or a bag of grapes. Then, one day my friend Joan opened her lunch box and took out a plastic baggie of the most amazing cookie – a chocolate marshmallow cloud. Even at the age of 10, I was a bit of a cookie aficionado – and this was one that I had never seen. A sweet, perfect marshmallow sat on top a buttery, vanilla cookie and coated in chocolate. My mission every day became to procure one of those cookies.
Sometimes I succeeded. Other times I bitterly failed. One day -and I am not proud of this – I might have reminded Joan how she wanted to lose weight and how the cookie might be safer with me.
Middle schoolers are vicious.
Now is my redemption. If I still knew where Joan was today, I would make her three dozen of these cookies and package them with my deepest apologies. I still feel guilty for that one.

I recreated my friend’s cookies for this recipe and gave them a holiday spin. M&M’s® White Peppermint infuse this dessert with mint and Pillsbury™ Funfetti® Holiday cake mix makes this baked good extra festive. I bought these and the other ingredients at my local Walmart. Ibotta also has a $0.50 rebate on any variety M&M’s® (8 oz bag or larger.)
Making the Cookies
Creating cookies from a cake mix are super easy. Not only is it faster than baking from complete scratch, but the cookies tend to be a little softer. And who doesn’t love a super soft cookie that you barely even have to chew? One that just melts in your mouth as you enjoy that little moment to yourself before the craziness?
To add the peppermint flavor, I chopped up a handful of M&M’s® White Peppermint and stirred them into the cookie batter.
Then I grabbed teaspoon sized chunks, rolled these into balls and flattened them into perfect circles on a cookie sheet using a glass dipped in flour.
As they baked, I cleaned the entire kitchen.
No, that’s a lie. I snacked on M&M’s® Holiday Peanut Butter and M&M’s® Holiday Milk Chocolate and thought, “Baking cookies is AWESOME!”
To add the marshmallows, I placed a halved marshmallow, sticky side down on top of each hot cookie and put the tray back in the oven for another minute.
Once the timer rang, I let these cookies cool on a rack and then transferred them to a plate. I stashed this plate into the freezer for 30 minutes to make these treats nice and firm for chocolate dipping.
Using two forks, I placed each cookie in a bowl of melted chocolate candy melts and shook off the excess chocolate before placing each on a rack over wax paper. I placed two M&M’s® on top of each cookie before the chocolate hardened.
Biting into these cookies took me right back to elementary school – except they are better. Chocolate, mint, and marshmallow are one a perfect combination. Along with a glass of cold Great Value milk, they make an excellent afternoon snack.

My love for these cookies is just as strong as it was in elementary school. Once I baked these, I had to package them in tins.. immediately.

- 1 pkg Pillsbury™ Funfetti® Holiday Cake Mix
- 1/3 cup vegetable oil
- 2 eggs
- 1/4 cup M&M’s® White Peppermint, chopped
- 1 bag large marshmallows, halved lengthwise
- 2 bags candy melts, light cocoa
- Additional M&M’s® White Peppermint for tops
- Preheat oven to 350 degrees.
- Mix together cake mix, vegetable oil and eggs.
- Stir chopped M&M’s® into batter.
- Roll into teaspoon sized balls and place on cookie sheet.
- Flatten on cookie sheet using bottom of glass dipped in flour.
- Bake for 6 minutes.
- Remove from oven and place a half of marshmallow on top of each cookie, cut side down,
- Bake for an additional minute.
- Allow cookies to cool for 1 minute on pan and then transfer to rack.
- Once cook, place cookies in the freezer for 30 minutes.
- Melt candy melts according to package instructions.
- Place cold cookie into melted chocolate candy melts. Coat thoroughly and use two forks to remove to rack. Make sure to shake off excess.
- Place two M&M’s® White Peppermint on top of each cookie before chocolate hardens.
