Gingerbread Punch

Something sad happened to me this summer.  Not overwhelmingly sad, just a bit of a bummer. I got gastritis brought on by drinking at least 2 cups of coffee a day and a glass of red wine at night.  I know.. what was I thinking? 

I ruined my stomach.  And although it will someday heal, if I’m nice to it, for now I need to lay off the coffee… and the alcohol.  No Christmas mulled wine.  No nice glass of wine with dinner.  No glass of wine while cooking (can you tell how sad I am about the wine?).

I have found ways around my new situation though and love mocktails! Using the right mix of ingredients, I can achieve that same mouthfeel of the usual drinks that I imbibe in but without the alcohol. And as a bonus, my kids can enjoy them with me as well.

This gingerbread punch has a nice bite of ginger followed by the sweetness of molasses that is reminiscent of biting into a fresh gingerbread cookie.

The Recipe 

First, rim your glasses with cinnamon sugar. Fill a small flat bottomed bowl (I used my son’s cereal bowl) with a 1/2 inch of water.  On a small plate, mix together 2 tablespoons of sugar and 1 tsp cinnamon.  Dip your glass first in the water.  Shake off the excess and then dip in the sugar mixture.  Sit upright.

In a blender or martini shaker, mix the egg nog with the molasses and ginger.  Blend (or shake).  Distribute evenly between the two glasses.Gingerbread in a drink! This punch has no caffeine, no alcohol and yet has plenty of holiday charm. Serve this Gingerbread punch at your next holiday party.

This drink is creamy and spicy.  I love the strong taste of ginger, but if you find that the ginger is too strong for you, feel free to half it in the recipe.

I also found the Gold Emblem Holiday Chocolate Covered Pretzels from CVS go perfectly with this mocktail.  They balance the drink well with a little bit of salt and chocolate deliciousness.Gingerbread in a drink! Ingredients
  • 8 oz low-fat egg nog
  • 4 Tsp molasses
  • 1 tsp ginger, ground
  • 4 oz club soda
  • ground cinnamon & granulated sugar (optional)
Instructions
  1. Rim glasses with a mixture of cinnamon & sugar.
  2. In martini shaker (or blender), mix egg nog, molasses, and ginger.
  3. Shake (or blend).
  4. Pour evenly between two glasses.
  5. Top with club soda.
  6. Stir and enjoy!
